Caribbean Honey-Spiced Chicken with Mango

Honey isn't just sweet, but there are many claims about its health and healing benefits. Some believe that honey does everything from healing wounds (due to its antimicrobial properties) to treating allergies. Those that use honey for building an immunity to their pollen allergies, a local Wildflower Honey is preferred.

At ArmadilloPepper.com, we are certainly fans of honey and particularly the many different uses for honey when preparing meals. We use honey as a sweetener in coffee, as a topping on pancakes and in many other recipes. Today's recipe is one we made from the National Honey Board.

Caribbean Honey-Spiced Chicken with Mango

Ingredients
  • 1/4 cup Wildflower Honey (or your favorite honey)Wildflower Honey
  • 4 boneless, skinless chicken breast halves
  • 1/4 cup Lemon Juice
  • 2 teaspoons lemon peel, freshly grated
  • 1 ripe mango, peeled and diced
  • 1 small onion, peeled and quartered
  • 2 fresh jalapeno peppers or serrano peppers – halved and then seeded
  • 2 teaspoons paprika
  • 2 teaspoons vegetable oil
  • 2 teaspoons garlic salt
  • ½ teaspoon cinnamon
  • ½ teaspoon black pepper
  • ½ teaspoon ground allspice
  • 1 tablespoon vegetable oil
Procedure
  1. Using a small bowl, combine honey, lemon juice and lemon peel. Whisk until well blended.
  2. Remove ¼ of the honey-lemon mixture, place in a food processor container and set aside.
  3. Add mango to honey-lemon mixture remaining in the bowl. Coat mango with the mixture. Cover and store in the refrigerator.
  4. Add onion, jalapenos,, paprika, oil, garlic salt, cinnamon, pepper and allspice to the honey-lemon mixture in the food processor container. Process until finely chopped.
  5. Spread mixture evenly over both sides of skinless chicken breasts.
  6. Spread oil in a 13 x 9 x 2 inch baking pan. Arrange chicken breast in pan.
  7. Bake at 375 degrees for 30 minutes or until thoroughly cooked.
  8. Plate chicken and top with the mango honey-lemon mixture that was reserved in the refrigerator.
