Peruvian Pork with Mango Mojo Sauce

Looking for another simple and delicious meal? This recipe comes courtesy of Johnny and Nicole at Heartbreaking Dawns.
Grab yourself a 2 pound pork loin, throw it on the grill and sear on high heat for about 3 minutes on each side. Then move this to the crock-pot. Mix the following to make the glaze and then add to the crock-pot.
Glaze:
1/2 cup Heartbreaking Dawns Fiery Trail Preserves
1 tsp. Mustard
1/2 cup Orange Juice
1 tsp sea salt
1/2 tsp white pepper
2 diced scallion
Cook on high heat until the internal temperature of your pork roast reaches160F (approximately 2 hours). Turn off the crock-pot and allow the pork loin to rest.

Next, prepare the Mojo.
The Mojo:
In a sauce pan simmer:
3 tbs olive oil
1/2 medium red onion
2 large diced garlic cloves
Add 1/4 cup lime juice
1 cup Orange Juice
4 tbs Heartbreaking Dawns Mango Habanero Hot Sauce
Cook down until reduced by half. Whisk in some fresh Cilantro and Salt to taste. Drizzle over the Glazed Pork Loin. We serve this one with Caribbean rice. Enjoy!
