The Shizzle: Jamaican Jerk Pork

Shizzle Jerk Marinade

A recent addition to Armadillo Pepper is The Shizzle Jerk Marinade. TheShizzle comes in two versions: Original Recipe and Voodoo. With a name like “Voodoo”, it probably doesn’t take much to figure out that Voodoo is their spicy version. The flavor basis for TheShizzle is a special pineapple mash. According to TheShizzle, the mash is loaded with a precise blend of herbs, spices, garlic, andhabanero peppers, crafted in small batches with only the finest ingredients available. Whether you like it hot withhabaneros or just a bit spicy, TheShizzle brings the flavor of traditional Jamaican Jerk.Today was a family event, so we went with Original Recipe. The heat level of Original Recipe is designed is somewhat mild and will only mildly offensive to folks who don’t prefer any spicy food.

The fare: boneless pork chops. The preparation is quite easy. To marinate the pork, simply pu your chops in a gallon ziploc bag, then pour The Shizzle marinade over the pork. Seal the bag, shake a bit to cover all the meat, seal and place in the refrigerator. According to The Shizzle, marinade time is 1 hour to 24 hours. From experience, we find that longer is better. So, we placed this in the frig and let marinate for just under 24 hours.

The next day, I popped the marinated chops in the Smoker while generously covering the chops with The Shizzle marinade. Smoked at 200 degrees for about 3 hours and then finished on the grill. You could easily go straight from the marinade bag to the grill, but I had some extra time and like the smokey flavor. The end result is a rich Jamaican Jerk flavor without needing to take the time to create a unique jerk seasoning from scratch. I doubt that I would have the know-how to make a jerk seasoning as rich and delicious as The Shizzle.

Jamaican Jerk Pork

We finished this simple dish by cooking some white rice, adding a little cumin, thyme, tumeric, toasted coconut, toasted pecans, chicken broth, coconut milk and chopped pineapple. Then, mixed in some black beans. Easy and delicious authentic, Jamaican Jerk fare!
