The first step is to soak the ears of corn in water for a couple of hours. This helps to keep the corn moist while you are going through the smoking process. To soak the corn, just pull back the husks on the each ear and remove the silk. Don’t completely remove the husks, but pull back to the end so you can remove the silks. Next, place the corn in a large pot filled with water to cover the corn and let sit for about 2 hours.

Step 2 is to remove your corn from the pot of water and then brush the corn with an olive oil mixture. We use olive oil, sea salt and pepper. About 1 teaspoon each salt and pepper in about 1/3 cup olive oil for 6 to 8 ears.Pull the corn husks back over the corn before you place it in the smoker. This helps the corn to retain moisture. The smoke has no trouble permeating through the husk to give
the corn that nice smoky flavor.

The final step is to place your corn in the smoker for about 1.5 to 2 hours at 225 degrees F.
