Today we are smoking a turkey breast and using Stubb’s Injectable Chipotle Butter Marinade. If you’ve ever smoked a turkey breast then you know it can be a challenge to keep the turkey moist. One way to keep the turkey moist is to brine it the night before, but there is no need to brine when using an injectable marinade.
In addition to using the injectable marinade we will season the outside of the turkey breast with Tennessee Whiskey Gobblin’ Good Turkey Rub. The seasoning adds a really nice flavor, but it cannot penetrate the turkey breast. So, not only does an injectable marinade add moisture to the meat, but it also adds flavor deep into the turkey breast.
Before injecting the turkey and applying the seasoning start your smoker and let it heat to 225 degrees. While the smoker is heating you can prepare the turkey breast.
Many folks have never used an injectable marinade, but when you know the procedure it becomes a very easy process. The Stubb’s Injectable Marinade Kits includes the marinade and injector and is also available in two flavors: butter and Chipotle butter.
The first step is to unpackage the injector and then snap the metal tip onto the plastic housing. One tip for using the injector is to minimize the number of holes you put in the turkey. Each hole is an opportunity for juice to escape during the smoking process.
Draw the marinade up into the injector. You will want to make about four insertion points. Fully insert the injector in the first location. Inject some of the marinade as you slowly pull the injector back out of the turkey. However, do not remove the injector needle completely from the turkey breast. When you near the edge, push the injector back down in the turkey breast, but at a different angle and repeat the process of injecting marinade and slowly pulling out the injector. By using the same entry hole and changing the angle you can insert marinade in many parts of the turkey breast while minimizing the number of holes for juice to escape. After you have completed the marinade injection process, then generously season the outside of the turkey with the Gobblin’ Good Turkey Rub.
As mentioned earlier, I like to smoke turkey breasts at 225 degrees and today I am using mesquite wood. Smoking duration will vary depending on temperature and the size of the turkey breast. The key is to make sure you cook the turkey breast to an internal temperature of 165 degrees as recommended by the FDA. Always check the meat temperature in three or four spots. For this specific turkey breast our smoking time was a little more than 2 hours.
